Vegan No-Bake Peanut Butter Cookies

These easy vegan cookies don't require any baking and they're so chewy and yummy!

Ingredients
  

  • 1 cup oats rolled or quick
  • 1/4 tsp salt
  • 1/2 cup peanut butter
  • 1/3 cup maple syrup
  • 3 tbsp soy milk or milk of choice

Instructions
 

  • Combine all ingredients and mix well. You might have to warm the peanut butter if it's too firm.
  • Form a ball and press on a plate into cookie shape.
  • Let it chill to set.

Notes

I like to use unsweetened peanut butter, if you use sweetened, make sure to adjust the amount of maple syrup accordingly.
