Vegan No-Bake Peanut Butter Cookies

If you love chewy and soft cookies but are too lazy for baking (like me 😜) you’re going to love this one!
These delicious vegan peanut butter cookies don’t require any oven action and they’re good to go (in your mouth) in 5 minutes.
Just whisk everything together and put it in the fridge. The nut butter and maple syrup will make these cookies sticky enough so they’re holding together like glue, even without chilling them to set.

They honestly taste like Clif bars, but softer. Now we know how they make them 😉 It’s actually pretty easy.
I highly recommend you try no-bake recipes. Not baking your dough actually makes the flavours even more intense.
You can also add some cocoa powder or chocolate chips if you want to make it extra special.
This is how the dough should look, it’s not too dry but not too wet either. It should be quite sticky and you shouldn’t have any problems forming a ball with your hands.
If substitute the maple syrup with a sweetener, make sure to adjust the liquids accordingly, otherwise, your dough might end up being too dry!
I like to use coconut sugar syrup, as it gives the cookies a caramelly flavour. But it’s also delicious with regular maple syrup, so don’t stress yourself with fancy ingredients.
You can store them in the fridge for a week or in the freezer for even longer. They are actually delicious straight from the freezer!

Vegan No-Bake Peanut Butter Cookies
Ingredients
- 1 cup oats rolled or quick
- 1/4 tsp salt
- 1/2 cup peanut butter
- 1/3 cup maple syrup
- 3 tbsp soy milk or milk of choice
Instructions
- Combine all ingredients and mix well. You might have to warm the peanut butter if it's too firm.
- Form a ball and press on a plate into cookie shape.
- Let it chill to set.
