There’s not much left in the pantry again, but you want a quick, tasty breakfast? These vegan pancakes are super simple and healthy! Thanks to the ripe bananas, they taste a little sweet and they also make them very fluffy. No need for egg!

My criteria for a successful breakfast during the week are the following: Fast, easy, healthy but still delicious. High standards, but these vegan pancakes definitely meet them!
I normally eat a lot of oats in all variations… porridge, overnight oats, bircher muesli and so on.
Mix Things Up
This recipe is a nice change from time to time. (Although it also contains sneaky oatmeal again :D)
There’s often the prejudice that pancakes take a long time to prepare and are therefore often degraded to a weekend treat. Wrongly so!
Pancakes can be prepared within a few minutes and with only a few ingredients. With such a connoisseur – breakfast even busy mondays can feel like a Sunday 😉
Experiment Around With This Recipe
If they’re a bit too boring for you, you can add 1 teaspoon of cinnamon, vanilla flavour or a few pieces of chocolate. But they are also tasty without it!
I like to top them with everything that can be found in the pantry. Frozen berries, jam, nut butter and of course the classic maple syrup.
Vegan Pancakes Made From 3 Ingredients
Equipment
- Blender (optional)
Ingredients
- 2 Tbsp Bananas very ripe
- 3 Cups Oats alternatively flour
- 2 Cups Oat Milk
Instructions
- Crush oat flakes in a mixer until a flour is produced
- Mix with the remaining ingredients
- Heat the coated pan (or use oil) and add 1/3 of the dough
- Fry until the pancake gets bubbles on the edges. Turn and fry until golden brown
- Top with maple syrup, berries or nuts
